**Creamy Parmesan Garlic and Mushroom Chicken**

Ingredients
2 boneless, skinless chicken breasts, thinly sliced
2 Tablespoons Olive oil
Salt Pepper
8 ounces sliced mushrooms
Creamy Parmesan Garlic Sauce:
¼ cup butter
2 garlic cloves, minced
1 tablespoon flour
½ cup chicken broth
1 cup heavy cream or half and half
½ cup grated parmesan cheese
½ teaspoon garlic powder
¼ teaspoon pepper
½ teaspoon salt
1 cup spinach
Instructions
In a large skillet add olive oil and cook the chicken on medium high heat for 3-5 minutes on each side or until brown on each side and cooked until no longer pink in center. Remove chicken and set aside on a plate. Add the sliced mushrooms and cook for a few minutes until tender. Remove and set aside.
To make the sauce add the butter and melt. Add garlic and cook until tender. Whisk in the flour until it thickens. Whisk in chicken broth, heavy cream, parmesan cheese, garlic powder, pepper and salt. Add the spinach and let simmer until it starts to thicken and spinach wilts. Add the chicken and ,mushrooms back to the sauce and serve over rice or pasta is desired.

**Sheet Pan Fajitas**

Ingredients

1 1/2 pounds boneless skinless chicken breasts sliced into 1/2-inch thick strips
3 bell peppers cored and sliced into strips
1 yellow onion thinly sliced
3 Tablespoons olive oil
packet of fajita seasoning
8-10 small flour tortillas
desired fajita toppings: Sour cream, sliced avocado or guacamole, pico de gallo, shredded cheese

Instructions
Light grease a large sheet pan with non-stick cooking spray. Cut chicken and vegetables into strips. Lay the vegetables evenly on the pan and place the chicken on top of them.
Preheat oven to 400 degrees F.
Sprinkle fajita seasoning over chicken and veggies and mix it all together
Cook for 20-25 minutes
Serve on warm tortillas with extra toppings, if desired.

**Crispy Cheddar Chicken**
Ingredients

Chicken:
2 large chicken breasts, or tenders
2 sleeves Ritz crackers
1/4 t salt
1/8 t pepper
1/2 C milk
2 C cheddar cheese, grated
1 t dried parsley

Sauce:
1 10 ounce can cream of chicken soup
2 T sour cream
2 T butter

Instructions

1. Cut each chicken breast into 3 large chunks, unless using tenders
2. In a small food processor grind up the ritz crackers.
3. Pour the milk, cheese and cracker crumbs into 3 separate small pans. Toss the 1/4 t salt and 1/8 t pepper into the cracker crumbs and stir the mixture around to combine.
4. Dip each piece of chicken into the milk then the cheese. Press the cheese into the chicken with your fingers. Press the cheesy chicken into the cracker crumbs and press it in.
5. Spray a 9×13 pan with cooking spray and lay the chicken inside the pan.
6. Sprinkle the dried parsley over the chicken.
7. Cover the pan with tin foil and bake at 400 degrees for 20-25 minutes. Remove the tin foil, bake for an additional 10 minutes, or until the edges of the chicken are golden brown and crispy.
8. Into a medium sized sauce pan combine the cream of chicken soup, sour cream and butter with a whisk. Stir it over medium high heat until the sauce is nice and hot. Serve over the chicken.
