Hi, I’m Stephanie Gallagher, The Iron Chef Mom — http://www.TheIronChefMom.com — and today, we’re making a Mexican cheeseburger and fries casserole.
For this recipe, you will need:
1 lb. lean ground beef
1 tsp. chili powder
1 10-12 oz. can or box of condensed tomato soup
1/4 cup milk
1 cup black beans, rinsed and drained
1 cup frozen corn, thawed
1 cup shredded Mexican cheese blend
10 oz. frozen seasoned sweet potato fries (you can use regular fries if you prefer)
Preheat the oven to 350 degrees.
Brown the ground beef and the chili powder in a large skillet.
Add the tomato soup and milk, and stir well.
Add the beans and corn and mix them in. And transfer to a greased 1-quart baking dish.
Top with the cheese and the fries.
Bake for 25 to 35 minutes until the casserole is bubbly. And here is your Mexican cheeseburger and fries casserole.
