This easy, colourful Cold Pasta Salad recipe is a great side dish all year round. Children and adults love it. And, it’s an ideal make ahead dish because the flavour only improves as it chills.
One of the easy & tasty recipe for lunchbox or snack time.

Servings : 4 people
Ingredients :
Elbow pasta – 1 cup
Olive oil – 2 tbsp
Mayonnaise – 3 tbsp
Sweet corn – 1cup
Salt – 1.5tsp
Black pepper – 1tsp
Red chilli flakes – 1tsp
Fresh basil – 1 tsp
Italian seasoning – 1tsp
Black olives – 1 tbsp
Green olives – 1 tbsp
Green pepper – 1/3 cup
Onions – 1/4 cup
Parmesan cheese – 1.5 tbsp
Method :
Firstly in a saucing pan add 2 cups of water & add 1 cup of elbow pasta cook until pasta turns soft ( this will yield to 2 cups). Rinse well with cold water & keep aside.
In a mixing bowl add 2 tbsp of olive oil & 3 tbsp of Veggie mayonnaise whisk well until it mix throughly.
Add 1 cup of boiled sweet corn, 1tbsp of green olives, 1/3 cup of green pepper, 1tbsp of black olives, 1/4 cup of chopped onion,1tsp of basil, 1 tsp of Italian herbs, 1 tsp of black pepper powder, 1 tsp of red chilli flakes,1.5 tsp of salt mix everything well & add boiled pasta & give it a good mix. Refrigerate the prepared pasta for an hour before serving.
Lastly add 1.5 tbsp of Parmesan cheese on top & serve cold.
