Excuse my hair, I was just really craving this caldo and I didn’t want to get dressed up just to make a caldo lol. The weather in Houston has been dark & moody and it was a perfect time to cook this up. This receta is so easy to make and even your little ones will love it. It’s one of my favs!
4-6 pounds of beef shank
Let boil for 1 hour in:
6-7 quartz of water
Add 1 cup of beef broth or stock (or water) after 30 minutes
salt to taste
1 teaspoon of garlic or whole
1 half of a medium onion
4 small celery sticks
3 to 4 potatoes
1 jalapeno
After an hour add:
1/4 of cilantro
Head of cabbage
3 Mexican squash or zucchini
3-4 fresh ears of corn
Keep on low for another 30 minutes.
