Ingredients for Chilli Paste:
(Serves 2)
– Kashmiri Red Chillies
– Salem Gundu
– Guntur
– Water
Ingredients for Schezwan Sauce:
– 1/4 cup Vegetable Oil
– 15 Cloves Garlic(sliced)
– 1 tsp Ginger(grated)
– 1/4 cup Celery
– 1/4 Spring Onion White(sliced)
– Chilli Paste
– 1/2 cup Water
– 2 tbsp Soy Sauce
– 1 tbsp Ketchup
– 1/4 tsp Black Pepper Powder
– 1 tbsp Sugar
– Salt
– 1 tsp White Vinegar
Ingredients for Schezwan Chicken:
– 2 tbsp Oil
– 200 gms Boneless Chicken
– 1 tsp Garlic(minced)
– Ginger(minced)
– 2 Spring Onions(sliced)
– 1 Capsicum(sliced)
– 4 tbsp Schezwan Sauce
– 3/4 cup Chicken Stock
– 1 tbsp Soy Sauce
– 1 tbsp Ketchup
– 1/2 tsp Sugar
– Black Pepper Powder
– 2 tbsp Corn Flour
– Salt
– 1/2 tsp Vinegar
Method:
1. Take pre-soaked kashmiri red chillies, salem gundu, guntur and put it in a mixing bowl, along with some water
2. Grind it and in a separate pan add vegetable oil, sliced garlic cloves, grated ginger and saute it till the raw sell of ginger and garlic goes away
3. Now add celery, sliced white spring onion, grinded chilli paste
4. Cook this mixture for around 2-4 minutes over a medium flame
5. Now, add water to this mix, followed by soy sauce, ketchup, black pepper powder, sugar, salt
6. Once the oil starts to separate turn off the flame; stir and add white vinegar
7. Keep this schezwan sauce aside, and in a different wok heat oil
8. Now, add boneless chicken and mix it till the chicken turns slightly golden
9. Once fried, take it out in a plate and in the same oil add minced garlic, minced ginger
10. Saute it till the raw smell goes away
11. Now, add sliced spring onions, sliced capsicum, fried chicken and stir it
13. Add 4 tbsp schezwan sauce to the pan and mix it
14. Now add chicken stock, soy sauce, Ketchup, sugar, black pepper powder to the mix and mix it
15. Now in the remaining chicken stock add 2 tbsp cornflour and mix it to form a smooth slurry
16. Pour it right into the pan; stir it and turn the flame to high
17. Now, add a little salt and give it a stir
18. Turn off the flame and add vinegar to it and mix it
