Chinese SPICY Chili Beef Stir Fry

INGREDIENTS:
1 to 1 1/2 pounds thinly sliced beef – I used a London Broil cut
1/8 tsp. white pepper
1 egg white
2-3 tbsp. cornstarch
*Mix above ingredients and let marinate for 30 minutes
*Velveting technique:
Bring pot of water to light boil. Cook beef in two batches as to
not to overcrowd the pan.
Place beef in water and then give a gentle single stir so nothing sticks.
Let beef cook for 1-2 minutes and the beef will start to float to the top
when done. Remove from water and set to the side.

1 cup diced onions
1 large diced carrot
2 diced celery stalks
1/2 diced green bell pepper
1 tbsp. minced garlic
1 tbsp. minced ginger
oil
chopped green onions for garnish

SPICY SAUCE:
1/2 cup water
2 tbsp. ShaoXing cooking wine or rice vinegar
1 tsp. dark mushroom flavor soy sauce
4 tbsp. Hoison sauce
3 tbsp. ketchup
2 tbsp. brown sugar
4 tbsp. sweet chili sauce
2 tsp. cornstarch
*Mix above ingredients well and set to the side

In a wok or pan on medium heat add oil, minced garlic and ginger.
Cook and stir for 30 seconds.

Add vegetables, cook and stir for 5-8 minutes or until veggies are tender.

Pour over sauce, turn up heat to med high to bring to simmer.
Bring to simmer and cook for one minute.

Add cooked beef, stir to combine and serve.

Enjoy.
