This homemade espasol recipe is made from glutinous rice flour cooked with coconut milk or gata ng niyog then dusted with toasted rice flour for that hint of mellow aroma and flavor.

Here are the Ingredients that you will need to prepare to make this Espasol:

4 cups glutinous rice flour
2 cans coconut milk
2 cups dark brown sugar
1 teaspoon vanilla extract
1 teaspoon table salt

Here are the Step by Step Procedures on How to Make Espasol:

1. In a pan, toast rice flour over medium heat by stirring constantly until color changes to light brown. Set aside.
2. Scoop ½ cup of toasted rice flour on a bowl. Set aside for dusting.
3. In a pan, combine coconut milk, dark brown sugar, vanilla extract, and table salt.
4. Stir well over medium heat and allow to boil and thicken.
5. Add the toasted rice flour. Mix well and continue to cook over low heat.
6. Keep on mixing until the mixture turns sticky.
7. Dust a flat surface or a baking pan with the toasted rice flour then transfer the sticky espasol mixture.
8. Flatten surface of the sticky espasol mixture using a wooden spoon or a spatula.
9. Dust the surface with the remaining toasted rice flour then spread it evenly.
10. Let it cool down for at least 5 minutes before cutting it into serving pieces.
