Beef Pares is Filipinos popular Street Food with Chinese influenced..PARES means pair or Partner ..BEEF and RICE …beef dish usually served with garlic rice , some put beef on top of rice while others serve in separate dish..
ingredients and procedure is depends on you..what you believe and what you traditionally do..and this is my recipe..
ingredients…i used
480 grams beef meat. cut into cubes
2 to 3 cups water or more
1 medium size white onion
5 cloves garlic
1 sliced of ginger
1 tsp black pepper corn
2 to 3 bay leaf
2 star anise
2 tbsp brown sugar
1 tbsp vinegar..optional
1/4 cup light soy sauce
4 tbsp rice wine
nutmeg or five spice seasoning
salt and black pepper powder..if desired
1 tbsp cornstarch and 1 tbsp water
boil the beef with with enough water over high heat ..about five minutes or until the meat is no longer red..
strain and wash the beef
replace the beef in a pot with 3 cups water ..combine all ingredients
except cornstarch and sugar..
simmer gently until the meat is very tender..1 to hours ,add water as it needed..
half way through the cooking add the sugar and simmer for more minutes..
when beef is done..take out the meat and strain the broth
then pour back into the pot with the beef meat
bring to simmer and pour the dissolved cornstarch until thickened .stirring the mixture and cook the cornstarch
for another 3 minutes in low fire…and its done..
serve with your favorite rice..garlic rice,java rice,steamed rice,plain rice …mine is red rice……………enjoy..
