Easy Gumbo ~ Dinner Idea ~ Chicken & Sausage Gumbo Recipe ~ Updated Favorite ~ Noreen’s Kitchen

Greetings! Gumbo is on the menu tonight! This would have normally been done on a Sunday, but I was so busy it's Monday night's dinner. This is super simple and delicious. Chicken, Sausage and shrimp with rice peppers, onions, celery (The holy trinity) all cooked up in a tomatoey broth with just the right amount of spice. This will go together in just under an hour from start to finish. Including all the chopping and browning off, you will have a relatively quick meal that will give you enough leftovers to feed a family of 4 one more full dinner. I love one pot meals just like this because I am doing the work of two at one time.
