This salad is amazing! It is a gluten free pasta salad that will surprisingly keep you full longer. Packed with some amazing ingredients, you can really feel all the taste. This light but filling recipe is yet a healthy fresh new meal that you can build into your regime when you want to mix it up.
Servings: 6 Prep Time: 20 Mins
Ingredients:
24oz cucumber
12 egg whites (hardboiled)
8oz cherry tomatoes
10 pitted olives
1.5 cup garbanzo beans
2 Tbsp olive oil
1/4 cup apple cider vinegar
10 basil leaves, fresh
Directions:
1- hard boil 12 whole eggs. Once cooled, remove shells a d remove egg yolks. Chop egg whites
2- drain and raise 1 can of 16oz garbanzo beans
3- combine all chopped cherry tomatoes, chopped cucumber, and eggs. Toss with olive oil and apple cider vinegar
4- Top with sliced pitted olives and finely chopped basil. Serve cold!
