This is my recipe for Chicken and Vegetable Spring Rolls….
They are not traditional spring rolls. I started making these to get my kids to eat more veggies and it worked!!

You will need:
1 Cup of Celery (diced)
1 Cup of Carrots (grated)
3 Green Onions (chopped finely)
1 Whole Red Pepper (diced)
1 Cup of Bok Choy- Greens only (chopped finely)
1½ Cups of Bean Sprouts
1½ Cups of Cooked Chicken (diced or shredded)
1 tsp. of Fresh Ginger (grated)
1 tsp. of Black Pepper
1 tsp. of Dried Granulated Garlic
1/8 (one eighth) Cup of Soy Sauce
50 Spring Roll Wrappers
2 Cup of Canola Oil
1 Egg
…and, of course, Your Favourite Dipping Sauce
