1. ‘Cherpumple’, USA
● 4 eggs
● 5 ½ ounces of sugar
● 3 ½ ounces of flour
Whip egg whites with half of the sugar. Separately whip yolks with the rest of the sugar. Mix everything together and put in flour. Stir. Pour into a pie mold. Apple, pumpkin, and cherry. Bake for 20 to 25 minutes at 355°F. Coat the cake with buttercream frosting.

● 3 ½ ounces of sugar
● 1 ½ ounces of water

Soak gelatin in cold water. Mix yolks with sugar and cornstarch. Heat up milk with cherry puree. Pour some of it into yolks, stir, and pour it back to the remaining puree. Cook it till it thickens. Then aAdd in gelatin and butter. Stir it well, pour into molds and freeze.

For the mousse
● ¼ ounce of gelatin
● 1 ¾ ounce of water
● anise and cinnamon
● 4 ¼ ounces of milk
● 4 egg yolks
● 2 ½ ounces of sugar
● 13 ounces of 33% fat cream

Soak gelatin in cold water. Heat up milk with spices. Mix yolks with sugar. Pour milk on top and stir. Cook the cream until it thickens by stirring it all the time. Add gelatin. Let it cool a bit and add in whipped cream.

Assembling. Fill a half of a mold with the mousse, put in the cherry filling, cover it with mouse up to the top. Refrigerate.

Icing:
● 3 ½ ounces of white chocolate
● 1 ounce of crushed nuts
● 1 tablespoon of vegetable oil.

Melt chocolate. Mix all ingredients together. Dip the bottom of the mousse dessert into the icing.

4. ‘Pavlova’ Australia
● 6 ounces of egg whites
● 8 ounces of sugar
● 1 ½ ounces of water
● ½ ounce of cornstarch
Whip egg whites with sugar. Pour in water, and beat. Add corn starch, stir. Place onto parchment paper. bake for 2 hours at 195°F. Decorate with buttercream frosting.

5. ‘Trdelnik’, Czech republic
● 12 ½ ounces of flour
● 2 ½ ounces of butter
● ½ ounce of yeast
● 1 teaspoon of salt
● 1 cup of milk
● 2 eggs
● 2 tablespoons of sugar
● 2 teaspoons of cinnamon
● 3 ½ ounces of walnuts

Dissolve yeast in warm milk. Separate a yolk from a white and mix it with sugar. Add it to melted butter. Mix and add a teaspoon of salt and flour. Make dough and let it sit for 30 minutes. Make rolls out of little pieces, fasten them into one. Wrap the dough around a cylindrical mold.
Process nuts and cinnamon in a blender. Put the crushed nuts and sugar onto a mat. Coat the dough in this mix. Bake for 25 minutes at 355°F.

6. ‘Pastel de Nata’, Portugal
● 18 ounces of puff pastry
● 3 egg yolks
● 1 tangerine
● 10 ½ ounces of flour
● 1 ½ cups of milk
● 1 cup of sugar
● 1 cup of water
● 2 cinnamon sticks

Roll out puff pastry, make a roll and cut it into about one inch pieces. Put the dough into cupcake molds and shape it into tarts.
For the custard add 5 ½ ounces of milk to some flour. Dissolve sugar in water. Pour 7 ounces of milk into a saucepan, add tangerine rind and cinnamon sticks. Once the milk starts boiling, add in the milk and flour mixture you prepared before. Stir it and bring it to boil. Gradually add in syrup. Then add yolks. Mix.
Pour the custard into the tarts and put in a piece of tangerine. Cook for 15 minutes at 390 °F.

Caramel
● 1 cup of sugar
● 4 tablespoons of water

Dissolve sugar in water. Boil it till it becomes golden brown. Let it cool till it starts being stretchy.

7. ‘Mochi’ Japan
● 4 ½ ounces of rice flour
● 1 ounce of powdered sugar
● 1 ounce of mango juice
● 1 ounce of blueberry juice
● 8 ½ ounces of water
● 3 ½ ounces of dried apricots
● 1 ½ ounces of walnuts
● 3 ½ ounces of cream cheese
● 4 strawberries

Add powdered sugar to rice flour, juice and half of the water. Whip it with a mixer and microwave for 1 ½ minutes.
For the filling put in apricots and walnuts. Another filling option is cream cheese mixed with powdered sugar. Put a whole strawberry into it.
Roll out the dough on a mat. Cut into squares. Put the filling into one of them and fasten the dough to shape balls or something else.
