Today on my channel we are getting into the Fall spirit and cooking with apples! Apples are my all time favorite Autumn ingredient to cook with. Me and 5 other amazing vegan youtubers are bringing you 6 awesome vegan fall apple recipes! I don’t know about you but when I think of Fall I think of cinnamon, apples, colorful leaves, and cool weather. My favorite dessert to make each Fall season is homemade apple pie. I always bring it to my get-together’s with family and friends and it goes pretty quick. 🙂 Since going vegan I have learned that you can totally make apple pie without dairy butter and it comes out simply amazing. I always use Earth Balance vegan butter which gives my vegan apple pies that flaky buttery pie crust. I’m using Granny Smith apples but you can also use Pink Lady or Honeycrisp too (or a combo of all 3 – that works just as great too!). I just like tart apples for my vegan pie desserts.

VEGAN MINI APPLE PIE CUPS – FALL DESSERT RECIPE

Pie Crust:
2 cups flour
2/3 cup vegan butter, chilled (I use Earth Balance)
1 tsp salt
4 Tbsp cold water

Filling:
5 medium apples, peeled and chopped (I’m using Granny Smith, but you can also use Honey Crisp or Pink Lady or a combo of all 3)
3/4 cup organic cane sugar
2 tsp cinnamon
2 tsp nutmeg
6 Tbsp flour

Bake at 425 F for 25-35 min or until golden brown and the apples are bubbling!
