Braised Chicken with Mushrooms

Ingredients:
Serves 4-6- pax
800g of chicken
Some cooking oil
1 thumb size ginger – sliced
1 bulb of garlic
2 stalks of spring onion (tied into a knot)
8 pieces of Chinese mushrooms
Enough water to cover chicken in pot
3 tablespoons of light soya sauce
4 tablespoons of dark soya sauce
1 tablespoon of oyster sauce
10g of rock sugar
1 tablespoon of Chinese cooking wine
Some cornstarch solution

Stir Fried Chicken with Tofu & Salted Fish

Ingredients:
Serves 4 – 6 pax
Mix this part of ingredients together

2 pcs of chicken thigh meat (weighing around 400g)
1.5 tablespoons of oyster sauce
1.5 tablespoons of light soy sauce
1 teaspoon of sesame oil
A few dashes of white pepper
2 teaspoons of cornflour
Sauce ingredients
———
1 cup of water
2 tablespoons of light soy sauce
2 tablespoons of oyster sauce
1 tablespoon of premium dark soy sauce
1 teaspoon of sugar
Other ingredients
2 pieces of firm tofu (tao kwa)
30g of salted fish (dry type)
10g of sliced ginger
3 cloves of chopped garlic

Steamed Chicken in Ginger Sauce

Ingredients:
Serves 4 pax
Ginger paste

Blend (A) together into a paste and then fry (B) together.
(A)
12 cloves of garlic
100g of young ginger
90g of old ginger
0.25 cup of sesame oil
(B)
0.25 cup of sesame oil
Ginger paste
2 tablespoons of oyster sauce
1 tablespoon of light soy sauce
1.5 teaspoons of sugar
Marinated chicken – marinate for at least 20 mins

500g of chicken
1 teaspoon of salt
2 tablespoons of Chinese cooking wine – Shaoxing Huatiao wine
1 tablespoon of cornflour
1 tablespoon of ginger paste
Last step: Steaming the dish

Spread some ginger paste over marinated chicken and steam for about 10 – 12 mins.
