INGREDIENTS
6 chicken drumsticks, boiled, cooled;
500g (2 cups) potatoes, boiled and mashed;
Salt and pepper;
1 ½ tsp paprika;
1 ½ tsp curry powder;
60g (½ cup) flour;
50g (½ cup) shredded cheese;
2 egg yolks;
Egg wash, breadcrumbs for dredging.
METHOD
Combine potatoes with spices, cheese, flour and yolks. Mix to combine.
Wrap potato mixture around each cooked chicken drumstick to cover the meat completely.
Cover chicken in egg and then top with breadcrumbs.
Fry in preheated oil for 5-7 minutes or until golden and crispy all over. Serve right away.
