Today I’m making a gluten free potato salad – THREE ways! Here I have my classic potato salad recipe with eggs, my curried Indian style potato salad and a Spanish style potato salad with chorizo! Potato salad is my favourite summer salad or gluten free BBQ side dish. Potatoes are naturally gluten free and new potatoes and Jersey Royals are in season during the UK summer.
I boiled up a 1kg bag of baby potatoes to make all three salads, so each recipe is based on approx 330g (raw) of baby new potatoes.
I made:
– CLASSIC POTATO SALAD
– CURRIED POTATO SALAD
– SPANISH STYLE POTATO SALAD

You’ll need:
330g baby potatoes
2 large eggs (hard boiled for 7 mins)
2 spring onions
3 tbsp mayonnaise
1 tsp apple cider vinegar
Salt and pepper
For my CURRIED POTATO SALAD you’ll need:
330g baby potatoes
3 tbsp mayonnaise
1/4 red onion (finely sliced)
Chives or coriander to serve
For my SPANISH STYLE POTATO SALAD you’ll need:
330g baby potatoes
60g chorizo (diced and lightly fried until crisp)
5 cherry tomatoes (halved)
3 tbsp mayonnaise
1 tsp lemon juice
1/2 tsp garlic paste
1/2 tsp smoked paprika (to serve)
