Ingredients for making Punjabi chicken curry:
To marinate the chicken:
• 200-gram chicken
• 1 tbsp ginger-garlic paste
• 1/4 tsp turmeric powder
• 1 tsp Kashmiri red chili powder
• 1 tbsp lemon juice
• Salt to taste
To make the chicken curry:
• 1 bay leaf
• 1 black cardamom
• 3 green cardamoms
• 1 inch cinnamon
• 4 cloves
• 2 big onions
• 1 tbsp ginger-garlic paste
• 1 tsp Kashmiri red chili powder
• 1/4 tsp Turmeric powder
• 1/2 tsp cumin powder
• 2 tsp coriander powder
• Tomato paste (grind 4 tomatoes)
• 1/2 tsp Garam masala powder
• 2-3 green chilies, slit
• coriander leaves
• 1 tbsp roasted kasuri methi

How to make Punjabi chicken masala

1. In a mixing bowl, marinate the chicken with ginger-garlic paste, turmeric powder, Kashmiri red chili powder, lemon juice & salt. Set it aside.
2. Heat 3 tbsp of oil (low heat).
3. Saute the whole spices for 30 seconds.
4. Turn the heat on high & saute the onions until translucent.
5. Add ginger-garlic paste & sauté until onions are golden.
6. Add marinated chicken & cook for 5 minutes.
7. Add turmeric powder, Kashmiri red chili powder, coriander powder & cumin powder. Cook it for 2-3 minutes.
8. Add 3/4 cup water, tomato paste & salt. & cook uncovered for 3-4 minutes.
9. Cover & cook for 15 minutes. Stir in between.
10. The oil will separate from the masala.
11. Finally add garam masala powder, green chilies, coriander leaves & kasuri methi. Stir it, cover & cook for 2 minutes.
12. Punjabi chicken curry is ready to serve.
