Our Garlic Roasted Buttered Chicken Recipe is one of our favorite baked whole chicken recipes! It’s super tender & juicy, and ready in less than an hour. We smother the whole chicken with homemade garlic butter for tasty, crispy skin, and then stuff it with lemon and celery for one of the best roasted chicken you’ll ever taste!

This is a classic baked whole chicken recipe for a reason. It comes together in under 10 minutes and cooks in about 45 minutes. Whip up a couple of delicious side dishes, like our Roasted Sweet Potatoes with a buttery maple syrup glaze and crispy roasted brussel sprouts.

Garlic Roasted Buttered Chicken Recipe Ingredients
1 3 lb whole chicken, giblets and neck removed
1 teaspoon salt
1/2 teaspoon pepper
2 tsp minced garlic (or 4 cloves)
1/2 cup butter, softened and divided
1 stalk celery
2 lemons

Garlic Roasted Buttered Chicken Recipe Directions
Preheat the oven to 425 degrees. Begin by cutting one stalk of celery into 3 or 4 pieces. Cut one lemon into quarters. Then cut the other lemon into thin slices.

To prepare the chicken, remove internal organs that may be packed in a bag inside the cavity. Today I’m using a 3 lb Empire kosher chicken, so I just have the neck to remove and discard. I like using Empire chickens because they always turn out tender and juicy.

Next, stuff the chicken with the quartered lemon and celery pieces. Trussing the chicken helps it cook more evenly. To secure the chicken legs together use twine or to use the chicken skin, cut a small hole into the skin and push the opposite drumstick through the hole. Stuff about half of the butter into the chicken. Using your fingers, loosen the skin from the chicken breasts and thighs.

To make the garlic butter, in the softened butter measure out 1 teaspoon salt, 1/2 teaspoon ground black pepper, 1 tsp of minced garlic (about 3 – 4 cloves). Mix this all together. Take a handful of the garlic butter and place it under the skin of the chicken, along the breast and thighs. Butter both sides, legs and wings of the chicken with the remaining butter.

Place the chicken in a large, cast iron skillet or roasting pan. Bake uncovered for about 45 – 50 minutes. For this roast chicken recipe, we’re cooking the bird at a high temperature of 425 degrees. At this heat, the roast chicken cooking time is reduced to about 45 minutes, depending on the size of your bird. We’re using a 3 lb chicken. If your bird is larger or smaller, check the roast chicken cooking time (a 5 – 6 lb bird will be about 1 1/2 hr) or use a meat thermometer stuck into the thickest part of the thigh. For a fully cooked bird, the roast chicken internal temperature should reach 165 degrees. Remove the roasted chicken from the oven and tent with foil, letting it rest for 10 – 15 minutes for the juices to redistribute for the best juicy chicken recipe.
