INGREDIENTS
FOR MARINATION
1. Chicken curry cut – 600Grams
2. Turmeric powder – 1Tsp
3 .Red chilli powder – 5g
4. Ginger garlic paste – 1Tbsp
5. Salt – 1Tsp
FOR GONGURA PASTE
1. Gongura leaves – 200Grams
2. Green chilli – 2
3. Gingelly Oil – 30ml
FOR GRAVY
1. Gingelly Oil – 30ml
2. Cloves – 2 (whole)
3. Cardamom- 3 (whole)
4. Bayleaf – 1
5. Coriander Powder – 1Tbsp
6. Chopped Onions – 50Grams
8. Red chilli powder – 1Tbsp
9. Salt To Taste
PROCEDURE
1. Marinate the chicken in turmeric, red chilli ginger garlic and salt overnight in the fridge or minimum 3 hours.
2. For the Gongura paste heat Gingelly Oil, toss green chilli and wilt the Gongura leaves accordingly & puree the mix once cooled.
3. Take the chicken out of the fridge. In a pan heat Gingelly oil, add the whole spices and onions cook till translucent.
4. Reintroduce the chicken and cook till all sides are white. Add Gongura paste to the gravy & season accordingly.
5. Simmer for 15 minutes.
6. Check seasoning and serve with Ghee and Rice.
