I love chicken recipes! These ones are very easy! I’m cooking all my chicken at one time in the Instant Pot and then will use it throughout the week. But you could easily cook the chicken every time you make a recipe! I just wanted to share with you different recipes where you use your IP to make it, but then can use your oven to cook it! The best part is, once you prep the chicken, these come together SO FAST especially now that it is back to school time! Hope you love them!

Avocado Enchiladas:
3-4 cups cooked chicken breasts, chopped or shredded
2 cups shredded Mexican blend cheese
3 avocados, peeled and chopped
8 flour tortillas
Green Enchilada Sauce
Place Chicken and avocados on top of the tortilla. Add a little cheese and enchilada sauce and put on top. Roll the tortilla and place in a 9×13 pan. Bake at 350 degrees for 10-15 minutes until cheese is melted and tops are a bit browned
