Sake Chicken
To marinate:
Sake (Japanese rice fermented alcohol) – 1/2 cup
Soya sauce – 1/4cup
Maple syrup – 3tsp
Red chilly powder – 1/2 tsp
Pepper powder and crushed pepper – as per taste
Ginger powder – 1/2 tsp
Garlic powder – 1/2tsp
Chicken – 10 drumsticks cut into two pieces
To cook:
Onion – 1 big
Garlic cloves – 9-10
Bell peppers -2
Carrot – 1
Spring onion – a small Bunch
Oil for frying and sautéing
In a bowl mix everything under the marinade and keep aside for at least 1-2 hours. Chop all the vegetables and the chop the spring onion Whites and keep the greens to garnish. After 2 hours shallow fry the chicken and keep aside the left over marinade. To the left over oil add the onions, garlic, spring onion Whites and saute until translucent . Then add the chicken. Mix well. Then add the carrots. Saute for a few minutes and add the bell peppers and saute for a few minutes. Then add the marinade (sake soy sauce mixture ). Mix well and cover and cook until the chicken is done. Add more crushed pepper and garnish with the spring onion greens.
