General Tso’s Chicken, Rice n Broccoli in Ninja Foodi Full Recipe

Recipe:
1 egg
1 1/2 lbs boneless chicken thighs
1/3 and 2 tbsp cup corn starch/ divided.
1/4 teaspoon salt
1/4 teaspoon pepper
8 tablespoons chicken broth
2 tbsp soy sauce
2 tbsp ketchup
2 tsp sugar
2 tsp rice vinegar
2 tbsp canola oil
1 tbsp chopped ginger
1 tbsp chopped garlic
2 tbsp chopped green onions/ divided
1 tsp sesame oil
1 tsp toasted sesame seeds

1. Beat eggs in a big bowl. Add chicken and stir to coat all PCs
2. In another bowl combine cornstarch, salt and pepper
3. Add chicken to cornstarch mixture until every pc is coated.
4. Preheat Foodi to 400 degrees for 3 mins.
5. Spray fry basket with cooking spray. Add 1/3 of the chicken to the basket with space between each pc. Cook for 15 mins. The pcs tend to stick. Take a spatula half way through and scrape the chicken so they don’t stick. Let the time run down. Remove chicken and place in a separate bowl. May need to repeat process 2-3 times.
6. Whisk together 2 tsp of corn starch, broth, soy sauce, ketchup, sugar and rice vinegar.
7. Use Foodi pot and select SEAR/SAUTÉ. Medium heat. Add canola oil and ginger and garlic. Cook for 1 min 30 sec. Stir in cornstarch mixture. Increase heat to medium-high. Once the sauce bubbles, add the chicken. Continue to stir while sauce thickens and the chicken is every coated. 2-3 mins. Turn off the Foodi. Add 1 tbsp of green onions and sesame oil. Stir.
8. Ready to serve. Top with sesame seeds and 1 tbsp of green onions.

Steamed Broccoli:
2 cups of water
Broccoli

1.) Add 2 cups of water to pot
2.) Add broccoli to crisping basket
3.) Steam for 6 mins with pressure lid turned to VENT
4.) ready to serve.

Rice:

1.) Add one cup of water to pot
2.) Add one cup of rice to pot. Salt to your liking . 1 tbsp of butter.
3.) Pressure cook on high for 2 mins in VENT position. Once the 2 mins expires
Allow the KEEP WARM MODE to run up to ten minutes. Remove the rice.
4.) ready to serve
