Ingredients:
1 1/2 Cups Flour (180g) * I used whole wheat flour
1 Teaspoon Baking Powder (5g)
1/2 Teaspoon Baking Soda (2.5g)
1/4 Teaspoon Salt (1.5g)
1 Teaspoon Cinnamon (2.8g)
1/4 Teaspoon Nutmeg (0.55g)
1/4 Teaspoon Ground Cloves (0.5g)
2 Eggs
1 Teaspoon Vanilla (5ml)
1/3 Cup Buttermilk (80ml)
1/4 Cup Honey or Maple Syrup (60ml)
1/4 Cup Olive Oil (60ml)
1 Cup Pumpkin Puree (200g)
Directions:
1. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves until well combined. Set aside.
2. In another bowl, whisk together the eggs, honey, vanilla, oil, buttermilk, and pumpkin puree, until well combined and smooth. Add the pumpkin mixture to the dry ingredients, and beat or whisk just until combined and smooth.
3. Grease a skull pan with butter or cooking spray. Spoon the batter into each skull. Bake in a preheated oven at 350F for about 10 to 15 minutes or until an inserted toothpick comes out clean. Let rest in pan 10 minutes, then remove to a wire rack to cool completely.
