A quick and easy pasta salad recipe with grape/cherry tomatoes, romaine lettuce, green and Kalamata olives and artichoke hearts. Fresh steamed artichoke hearts are really delicious but but you can also use canned or preserved artichokes in jars to make it easier and will be equally tasty.
Ingredients (3-4 servings, as a main dish)
250 g [8.8 oz] pasta
1 – 2 fresh artichokes
10 – 12 grape/cherry tomatoes
8 – 10 romaine lettuce leaves
15 – 20 mixed green and kalamata olives
1 tablespoon olive oil
1 tablespoon red wine vinegar (or any other vinegar of choice)
Salt and pepper to taste
