HOMEMADE KFC CHICKEN
CHICKEN MARINADE
Chicken – 1 ½ kg
Curd – 1 cup + 1 ½ glass water
Garlic – 1 big bulb
Pepper powder – 1 ½ tbsp
Salt – to taste
SPICE COATING
Maida/ Plain flour – 1 glass
Corn flour – 2 tbsp
Salt – to taste
Pepper powder – ½ tbsp
Chilli powder – 1 tbsp
Chilled water and/or ice cubes
CRISPY COATING
Maida/ Plain flour – enough to coat all the chicken pieces
Salt – to taste
Chilli powder – ½ tbsp
Pepper powder – ¼ tbsp
Oil – to fry
Hi everyone, today let’s make easy KFC chicken at home with simple and easily available ingredients..
You can fry the chicken in large pieces or you can even cut them into medium pieces and fry so that they are coated really well with the crust and the crispiness..
First, we need to soak chicken pieces overnight in a batter made of curd and other spices..
To prepare the marinade, we need curd.. if you do not have curd you can add lime juice or vinegar to 2 cups of warm milk to prepare curd for the recipe..
We do not need very thick curd for the batter..we will blend the curd along with a glass of water in a mixer grinder to bring it down to the thin consistency of buttermilk..
I have selected leg pieces and wing pieces for this recipe, as it will look good for presentation.. you may use any medium sized piece when you make this at home, for better taste..
Once you have blended the curd with water in the mixer grinder, transfer it into a large bowl..
You can also buy buttermilk from the shop to avoid this step.
Into the blended curd, add half more glass of water and add a little salt to taste..
To the batter, now add a whole garlic ground into a fine paste along with a little water, 1 ½ tablespoon of pepper powder and some salt to taste.. make sure to add a little more salt than required so that the chicken pieces can absorb the salt well..
After adding all these ingredients, mix the better well and dip your chicken pieces in the batter and refrigerate it overnight..The chicken pieces should be fully submerged in the marinade.
To prepare the chicken the next day, to a glass of plain flour, add 2 tablespoons of corn flour and mix well to combine
Into this mixture, add ½ tablespoon of pepper powder, some salt to taste, and 1 tablespoon of chili powder and give it all a good mix..
To this, add ice cubes and a little water or really chilled water and mix it into a thick cold batter which can coat the chicken well..
The batter should neither be too runny nor too thick, but thick enough to to coat the chicken well..
In another large plate or a bowl, take some plain flour and season it with salt, pepper powder and chili powder..
After the two coatings are ready, take the marinated chicken pieces one by one from the marinade and dip it directly into the chilled spice coating so that the better quotes the chicken well..
Make sure that the spice marinade coats the chicken well and is thick enough..if the spice marinade is too runny it will not coat the chicken
After dipping it well into the spice marinade, take it out and roll it in the seasoned flour mixture..
Once the chicken is coated well with the seasoned flour, take it out and dip it back again into the chilled spice mix and bring it again back to the season flour mixture..
When you take the chicken out from the seasoned flour mixture, make sure to tap off the excess flour really well as shown in the video to make sure that the chicken gets wrinkly and the crispy texture as the real KFC chicken..
This step is very important because if you do not dust off the excess flour, the surface of the chicken will remain flat, without any wrinkles or texture.
Tap off the excess flour from the chicken pieces and make sure that the marinade coating the chicken is wet and not powdery/dry….
After dusting off the excess add it to hot oil and fry on all the sides until crispy and golden..
Once the chicken is cooked through and golden, remove from oil and the crispy home made KFC chicken is ready to be served.!!!
Make sure to drop in the chicken when the oil is hot and then reduce the flame to medium to low to cook the chicken through without burning the crust..When you fru on a medium flame, the chicken will cook through and the crust will turn really nice and crispy.
