Reshmi Chicken
Serves 5-6
Recipe in English:
Ingredients:
-Dahi (Yogurt) 1 Cup
-Tomato paste 2 tbs
-Cream 2 tbs
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Dhania powder (Coriander powder) 1 tbs
-Haldi powder (Turmeric powder) ½ tsp
-Zeera (Cumin seeds) roasted & crushed ½ tbs
-Namak (Salt) 1 tsp or to taste
-Chicken mix boti 750g
-Cooking oil 2 tbs
-Kaju (Cashew nuts) 13-14
-Pyaz (Onion) sliced 1 large
-Lehsan (Garlic) 4-5 cloves
-Adrak (Ginger) sliced 1 inch piece
-Hari mirch (Green chilli) sliced 2
-Water 2-3 tbs or as required
-Cooking oil ½ Cup
-Darchini (Cinnamon stick) 1
-Badi elaichi (Black cardamom) 1
-Laung (Cloves) 2
-Hari elaichi (Green cardamom) 2
-Sabut kali mirch (Black peppercorns) ½ tsp
-Tez paat (Bay leaves) 2
-Zeera (Cumin seeds) ½ tbs
-Hara dhania (Fresh coriander) chopped 2 tbs
-Podina (Mint leaves) chopped 2 tbs
-Hari mirch (Green chilli) sliced 2
-Garam masala powder 1 tsp
-Kali mirch powder (Black pepper powder) 1 tsp
-Adrak (Ginger) julienne
-Hara dhania (Fresh coriander) chopped
-Kaju & Badam (Cashew nuts & almonds)
-Hara dhania (Fresh coriander) chopped
-Adrak (Ginger) julienne
Directions:
-In a bowl,add yogurt,tomato paste,cream,red chilli powder,coriander powder,turmeric powder,cumin seeds,salt and mix well.
-Add chicken and mix well,cover and marinate for 30 minutes.
-In a wok,add cooking oil,cashew nuts and fry until light golden.
-Add onion and mix well.
-Add garlic,ginger and green chillies,mix well and sauté until soft.
-Take out in a bowl and let it cool.
-In grinder,add onion & garlic mixture,water and grind to make a paste & set aside.
-In the same wok,add cooking oil,cinnamon stick,black cardamom,cloves,green cardamom,black peppercorns,bay leaves,cumin seeds and mix well.
-Add ground paste,mix well and cook on low medium flame for 4-5 minutes.
-Now add marinated chicken and mix well.
-Add fresh coriander,mint leaves,green chillies and mix well,cover and cook on low flame until chicken is tender (14-15 minutes).
-Add garam masala powder,black pepper powder,mix well and cook on high flame until oil separates (2-3 minutes).
-Add ginger and fresh coriander.
-Garnish with cashew,alomnds,fresh coriander,ginger & serve!

Directions:
-Bowl mein dahi,tomato paste,cream,lal mirch powder,dhania powder,haldi powder,zeera aur namak dal ker ache tarhan mix ker lein.
-Chicken dal ker ache tarhan mix karein aur dhak ker 30 minutes kliya marinate ker lein.
-Karahi mein cooking oil aur kaju dal dein aur light golden hunay tak fry ker lein.
-Pyaz dal ker ache tarhan mix karein.
-Lehsan,adrak aur hari mirch dal ker ache tarhan mix karein aur naram hunay tak saute ker lein.
-Bowl mein nikal lein aur thanda ker lein.
-Grinder mein pyaz & lehsan ka mixture aur pani dal dein aur grind ker ka paste tayyar ker lein & side per rakh dein.
-Us he karahi mein cooking oil,darchini,badi elaichi,laung,hari elaichi,sabut kali mirch,tez paat aur zeera dal ker ache tarhan mix ker lein.
-Ground paste dal ker ache tarhan mix karein aur darmiyani ancch per 4-5 minutes kliya paka lein.
-Ab marinated chicken dal ker ache tarhan mix ker lein.
-Hara dhania,podina aur hari mirch dal ker ache tarhan mix karein aur dhak ker halki ancch per chicken gul janay tak paka lein (14-15 minutes).
-Garam masala powder aur kali mirch powder dal ker ache tarhan mix karein aur tez ancch per oil alag ho janay tak paka lein (2-3 minutes).
-Adrak aur hara dhania dal dein.
-Kaju,badam,hara dhania aur adrak sa garnish ker ka serve karein!
