32 oz. Elbow Macaroni
1 C Mayo
1/4 C White Vinegar, distilled
2/3 C Granulated Sugar
3 TBSP Mustard
1 TSP Salt
1 TSP Pepper
1 Onion, Diced
2 Celery Stalks, Diced
1 Red Bell Pepper, Deseeded and Diced
1 C Colby Cheese, Diced

Boil salted water and cook macaroni until al dente, 6-8 minutes.
Drain and rinse with cold water to cool down the macaroni. If you put in the hot macaroni with the other ingredients, it will melt the cheese.
In a large bowl, mix together the mayo, vinegar, sugar, mustard, salt and pepper. Add in onion, celery, bell pepper and cheese.
Stir in macaroni.
Cover and Refrigerate for at least 4 hours, overnight if possible.
