*Ingredients:*
– 1 cup Fresh finely ground Coconut
– 1 tbsp Unsalted Butter or Ghee
– 1/2 cup Sugar
– 2 tbsp Butter
– 1/2 cup Heavy Cream
– 1/8 tsp Salt (optional)
– A few drops of Vanilla Essence
– Melted Milk Chocolate
– Finely Chopped Roasted Nuts (optional, for coating)
– White Chocolate
– Dark Chocolate (for decoration)
*Instructions:*
1. Start by preparing the fresh coconut. Remove the shell and the dark portion. Then, cut the fresh coconut into small pieces.
2. Grind the coconut pieces coarsely.
3. In a saucepan, heat 1 tbsp of unsalted butter or ghee.
4. Add 1 cup of finely ground coconut to the saucepan. Roast the coconut on low to medium heat until the moisture in the coconut evaporates, and it turns light brown. Then, turn off the flame and set the roasted coconut aside.
5. In another saucepan, add 1/2 cup of sugar. Spread it evenly in the pan and let the sugar melt over low to medium heat.
6. As the sugar melts and begins to change color, gently swirl it around until it turns into a smooth, amber-colored liquid. Be careful not to burn it.
7. Lower the flame, then add 2 tbsp of butter to the caramelized sugar. Mix it until the butter is completely melted and incorporated.
8. Add 1/2 cup of heavy cream and continue to mix until the cream is fully incorporated. You can also add 1/8 tsp of salt and a few drops of vanilla essence for flavor, if desired.
9. Now, add the roasted coconut mixture to the caramel sauce. Mix it well until everything is combined.
10. Cook the mixture on medium heat, stirring continuously, until it reaches a dough-like consistency. This may take a few minutes.
11. Once the mixture has the perfect consistency, turn off the flame and allow it to cool slightly.
12. Take about 1 tablespoon of the mixture and shape it into small candy-sized pieces.
13. Melt some milk chocolate and coat each caramel coconut candy with it. You can also sprinkle finely chopped roasted nuts on top if you like.
14. Once the chocolate coating is set, you can decorate the candies further by drizzling melted white and dark chocolate on top, creating designs using a fork or any other decorative method.
15. Allow the chocolate to set, and your Caramel Coconut Candy with Milk/dark/white chocolate is ready to enjoy! Store them in an airtight container.
