Afghani Chicken is a quick and easy way to impress any foodie. It’s flavorful and rich. Eaten best with fluffy naans. This aromatic delicacy is hard to resist unless you are a vegetarian. The recipe holds good for mutton or lamb as well. However, one may consider pressure-cooking any red meat or use a tenderizer (raw papaya paste) to make it soft and fall off the bones.
Recipe for the Garam Masala:
Make it in bulk and keep in an airtight container.
Roast and Ground the following.
1) Coriander seeds- 1/2 cup
2) Cumin seeds- 1/4 cup
3) Green Cardamom- 15 pods
4) Bay leaves- 5-6
5) Black/Large Cardamom- 10 pods
6) Cloves- 10-12
7) Mace (Javitri)- 6 flowers
8) Cinnamon- 2 x 2 inch sticks
9) Star Anise (Phool Chakri)- 2
10) Fennel Seeds (Sauf)- 1 teaspoon
