White Tandoori Chicken Recipe
Ingredients:
– 3-4 Whole Chicken Legs
First Marination:
– 1 1/2 tsp salt
– Juice of 1 lemon
– 1 tsp green chilli paste
Second Marination:
– 3/4 cup yogurt (hand curd)
– 1 1/2 tbsp ginger garlic paste
– 1 tbsp green chilli paste
– 100 ml Fresh Cream
– 2 tsp roasted Kasuri Methi
– 2 tsp black pepper powder
– 1/2 tsp cardamom powder
– 1 tsp chaat masala
– 1 tsp black salt
– Salt to taste
– 3 tbsp Bhuna Besan (roasted gram flour)
– 3 tbsp mustard oil
Other Ingredients:
– Coal & ghee for smoking
– Melted Butter For Basting
– Green chutney & onions to serve
Method:
First Marination:
1. Clean the chicken legs, make slits on them, and pat them dry.
2. In a bowl, mix salt, lemon juice, and green chilli paste.
3. Rub this mixture all over the chicken legs, ensuring they are evenly coated. Marinate for at least 30 minutes in the refrigerator.
Second Marination:
1. In another bowl, combine yogurt, ginger garlic paste, green chilli paste, fresh cream, roasted Kasuri Methi, black pepper powder, cardamom powder, chaat masala, black salt, and salt to taste.
2. Add Bhuna Besan and mustard oil to the mixture. Mix until well combined.
3. Apply this marinade generously over the chicken legs, ensuring they are thoroughly coated. Marinate for at least 4-6 hours, or preferably overnight in the refrigerator.
4. Before cooking, place a piece of hot coal in a small bowl, add ghee, and let it smoke for 5-6 minutes.
Cooking:
1. Preheat the oven or air fryer to 180°C (356°F).
2. Place the marinated chicken legs on a wire rack set over a baking tray lined with foil or in the air fryer basket.
3. Air fry the chicken legs for 10 minutes at 170°C (338°F), then baste with melted butter.
4. Continue air frying/baking for an additional 5-6 minutes at 190°C (374°F), keeping an eye on them to prevent burning.
5. Once cooked, remove the chicken from the oven or air fryer.
6. Baste the chicken legs with melted butter.
7. Before serving, sprinkle with some chaat masala and a squeeze of lemon juice.
8. Serve hot with green chutney and onions on the side. Enjoy your flavorful White Tandoori Chicken!
