A simple but very tasty beef with gravy recipe. NOT Caribbean, but a wonderful dish rich with tender pieces of beef, simmered until fork tender and the gravy is simply delicious. Great for those winter nights when you want a thick and rich gravy for your mashed potatoes, to give you a cozy and warm feeling.
For this beef with gravy you’ll need…
1 lb beef (cubed)
1 tablespoon veg oil
1 onion
2 cloves garlic
3 sprigs thyme
2 scallions
1/4 teaspoon black pepper
5 cups (good) beef stock
1 carrot
1/2 cup frozen peas
salt (adjust based on salt content in beef stock)
* 1 teaspoon corn starch with 3 tablespoons water (optional)
