INGREDIENTS & NOTES

THE REMAINING INGREDIENTS WILL BE UPDATED WITHIN THE NEXT 1-2 HOURS!!

#1 Single Serving Tahini Brownie

2 tbsp vegan butter (28g)
2 tablespoons flour (22g)
a pinch of salt
1/4 tsp baking powder
1 tablespoon unsweetened cocoa powder (6g)
2 tablespoons sugar (23g)
1 tbsp applesauce (10g)
a few drops vanilla aroma or ¼ tsp vanilla
1 tbsp non dairy milk

for the tahini part:

1 ½ tsp white tahini
1 tsp powdered sugar
1 tsp non dairy milk

for serving: 1 scoop vegan vanilla ice cream (optional)

→ use one 6 to 8 oz (180 or 240ml) ramekin or ovenproof baking container of similar size
→ serves 1 (or 2 to share)

#2 Best Ever Salted Caramel

175g (a little over 1 cup) deglet noor dates (it was 25 deglet noor dates exactly)
⅓ cup (80ml) coconut blossom or brown rice syrup
2 ½ tbsp softened vegan butter
1 tsp vanilla or a few drops vanilla aroma
1 – 2 tbsp miso paste (start with one, see if you need more)
3 – 5 tbsp non dairy milk to adjust consistency (start with three, see if you need more)

→ serves 4

#2.5 Single Serve Banoffee Pie

for the crust:
4 – 6 vegan butter cookies (or graham crackers)
2 tsp non dairy milk or melted vegan butter
2 tbsp homemade miso caramel (see recipe #2)
1 banana, cut into slices
a few tbsp plain yogurt or vegan whipped cream
→ use one 6 to 8 oz (180 or 240ml) ramekin

#3 Single Serve Matcha Banana Bread

1 medium banana, mashed (= 90g or 1/3 cup banana mash)
1 tsp white wine vinegar or apple cider vinegar
1/2 tsp vanilla
2 tablespoons sugar
1 tsp matcha powder + 1 1/2 tbsp hot water
1 3/4 tbsp melted vegan butter, plus bit more for greasing
1/3 cup (40g) all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
pinch of cinnamon
→ use a 6 to 8 oz (180 or 240ml) ramekin
→ bake for up to 30 min at 180C

#4 Small Batch Panna Cotta

a little coconut oil for greasing 2-3 small glasses
1 1/2 tbsp cornstarch
1/2 tsp agar agar
1/3 cup non dairy milk (80ml)
1 cup soy cream (250ml) (or try full fat coconut milk or oat cream)
2 tsp coconut oil
1 tsp vanilla or a few drops aroma
2 1/4 tbsp sugar
pinch of salt
1 tsp lemon juice

for the strawberry sauce:

1 cup strawberries, roughly chopped (150g)
1 tsp lemon juice
1-2 tbsp sugar or syrup
1 tsp cornstarch mixed with 2 tbsp water

→ serves 2

#5 Steamed Cinnamon Rolls

1/4 cup minus 1 tbsp milk, warm not boiling (45ml)
2 tsp apple sauce (10g)
2 tsp vg butter (10g)
1/2 tsp vanilla
1 tbsp sugar (12g)
1/4 tsp dry active yeast
1/2 cup plus 2 tbsp flour (80g), PLUS a lil more for the surface
1/2 tsp cinnamon
pinch of salt

for the filling:
1 tbsp vegan butter or nut butter
1-2 tbsp cinnamon sugar mix
additional butter for greasing

for the glaze I combined 1 tbsp vegan sour cream, 1 tsp rice syrup, 1/2 tsp non dairy milk
