Today we embark on a healthier update to a classic dessert – the carrot cake! While this does not have cream cheese frosting, with its low calories, you could easily add your own and still stay within a reasonable calorie count! Just make sure that if you are going to frost it, you let it cool completely first! I’ve watched enough baking shows to know that situation. Also, if you don’t have a small cast iron skillet, you can use a regular 6-8 inch cake pan, and that should work just fine!

10 g Swerve brown sugar replacement
20 g no calorie sweetener
2 g baking powder
3 g pumpkin pie spice
2 g cinnamon
1 scoop vanilla protein powder
15 g sugar free syrup
60 g pumpkin puree
75 g nonfat Greek yogurt
92 g egg whites
34 g sugar free marmalade
61 g unsweetened applesauce
2 caps vanilla extract
2 caps butter extract
120 g shredded carrots

73 g carbs
