Salad Ingredients
1 jicama, grated
2 carrots, grated
1 apple, chopped
1/2 cup chopped almonds
1/2 cup raisins
1/2 cup fresh parsly, chopped
1/4 cup fresh mint, chopped
Dressing Ingredients
1/2 cup applesauce, apple butter or pureed apple
1/2 cup tahini (or other nut/seed butter)
1/4 cup balsamic vinegar
2 Tbsp dijon mustard (optional)
2 Tbsp maple syrup (optional)
1/4 cup or so water, if needed, for consistency
