For your tomatoes, there are several options. Grape tomatoes on the vine or cherry tomatoes on the vine work best, but regular cherry and grape tomatoes will work as well. The Tuscan Italian white wine vinegar can be substituted for extra lemon juice if needed.

-5 oz baby arugula
-12 oz grape tomatoes on the vine (or cherry tomatoes on the vine)
-1/3 cup Italian extra virgin olive oil
-1 lemon
-1 tablespoon Tuscan Italian white wine vinegar
-2 ripe avocados
-1/4 red onion, very thinly sliced
-1 small shallot
-1/2 teaspoon dijon mustard
-1/4 teaspoon crushed red pepper flakes
-salt and pepper to taste
