In this video I present Arugula Salad Recipe made with butternut squash, feta cheese and fruits. If you can’t stand harsh taste of arugula prepare to be amazed and to change your mind after having this salad with a special dressing. Taste is so well balanced in this recipe that I just keep on eating “the last bite” of it through the evening. Arugula is a leafy green that you may know under different names such as rocket salad, rucola, rucoli, rugula, or even colewort and roquette. Eruca Sativa is its Latin name. Those edible green leafs are annual plants that can be used a salad vegetable – arugula is eaten raw in salad and it is considered a part of a healthy diet.
Rucola is a great way to substitute lettuce in you salad and prepare something new, something different and unusual. In my recipe I also include my own salad dressing recipe. Both – the salad as well as a dressing are made completely from scratch. It will take only couple of minutes to make it. I use only fresh and nutritious ingredients. Colewort salad is served very often with sweet vinegary dressing. In my arugula salad recipe I included delicious fresh fruits to add sweetness to the taste.
To make this salad you will need ingredients listed below:
1/2 of butternut squash
small head of red leaf lettuce
2 cups of arugula
about 1/4 cup of pomegranate seeds
1/4 cup of feta cheese
1 tsp of hemp seeds (optional)
8 segments of a mandarin
Salad dressing for arugula ingredients:
juice of 1/2 lime
3 tbsp of extra virgin olive oil
salt
parmigiano reggiano
Instructions how to make salad:
Cut squash into cubes. Place it on the baking dish. Add salt and cooking oil. Preheat oven. Bake for 20 minutes at 400 F / 205 C. Cool squash down after baking – don’t add hot squash to the salad. By the time squash is cooling down prepare other ingredients. First wash all your greens well under running water. Drain them well.
Separate leafs of red leaf lettuce and place them on the big platter. Place arugula on top of the lettuce. Transfer cooled squash to the plate. Garnish with pomegranate, feta cheese, hemp seeds and mandarins. Green veggies with fruits prepared this way need only salad dressing now. To make the dressing freshly squeeze 1/2 lime to a small bowl. Add olive oil and salt. Shred parmigano reggiano. Mix it well and pour over the rucola salad. It is ready. Bon Appetit!
