Soft and luscious pieces of boneless chicken that is flavoured to perfection, married to extremely delicious and equally flavourful rice, this recipe is magical. With some lovely and sweet vegetables, this recipe makes for an easy and filling meal, that you can make as a part of your meal prep. You will fall in love with it!
I invented this recipe during lockdown when one pot meals came as a saviour. I have been making this ever since and everyone in my family loves it. It is worth a shot.

Ingredients
To marinate the chicken:
600 g boneless chicken thighs
2 tbsp ginger garlic paste
Salt to taste
1 tbsp black pepper powder
For the rice:
1 1/2 cups long grained rice, washed and soaked for 30 minutes
2 tbsp oil
1 cup finely chopped onions
2 cups roughly chopped carrots
1/2 cup roughly chopped red bell peppers
1/2 cup roughly chopped yellow bell peppers
Salt to taste
1 tsp ginger garlic paste
1/4 tsp black pepper powder
2 cups hot water
3 tbsp sweet chilli sauce
1 tbsp Oyster sauce
2 tbsp dark soy sauce
Spring onion greens for garnish
