INGREDIENTS:
Tbsp. = Tablespoon
Tsp. = Teaspoon
///////Ingredients For Yemeni Hawaij Spice Mix/////////
Note: You can use any Mandi Spice Mix if you like.
2 tbsp. Black Pepper
3 tbsp. Coriander Powder
2 teaspoons. Ground Black Cloves
1 tbsp. Ground Green Cardamoms
2 and Half tbsp. Cumin Powder
Half tbsp. Turmeric Powder
///////Ingredients for Marinating the Chicken//////
1 Large Whole Chicken (Cut it into two)
3 tbsp. of Melted Clarified Butter
2 tbsp. of Hawaij Spice Mix
Half tbsp. Salt
2 Grams of Saffron
//////Ingredients for the Rice/////////
5 – 6 tbsp. of Clarified Butter or 7 – 8 tbsp. Vegetable Oil
2 tbsp. of Olive Oil (Only add, if using Clarified Butter)
5 Cloves of Garlic
3 Large Onions Chopped
4 Green Chillies Chopped
2 Whole Green Chillies
Dried Spices (Few Bay Leaves, 1 Cinnamon Stick, 3 Green Cardamoms & 4 to 5 Black Cloves)
3 tbsp. (110 Grams) of Hawaij Spice Mix or any other Mandi Spice Mix
2.5 to 3 tbsp. Salt
4 Cups of Basmati Rice (Wash the Rice to remove starch but do not Soak)
6 and Quarter Cups of Water (Add Water until it reaches the first Knuckle of your Middle Finger or Water should be 1 Inch above the Rice)
Some extra Clarified Butter to rub on the Rice
Small Foil Cups
Some Oil for the Coals
3 – 4 Hot Active Normal Charcoals
Serve it with Fresh Salad and your Favourite Sauces. ENJOY!
