Hyderabadi cuisine is the native cuisine of Telugu and Marathwada. This cuisine is also influenced by the cuisine from the Nizams, Mughals, Turkish and Arabic.
Hyderabadi chicken masala is a delicious chicken curry recipe from Hyderabadi cuisine. In this recipe, the chicken is marinated and cooked in a rich, spicy and aromatic gravy flavoured with fried onions, garam masala, and a good amount of heat with chillis.
Serve Hyderabadi Chicken Masala hot with Rotis/Chapatis or even plain steamed rice.

Ingredients :
To Make Fried Onion (Birista) :
2 medium sized Onion (sliced)
Marination :
600 gms Chicken (curry cut pieces with bones)
100 gms Fresh Curd (well beaten)
½ tsp Turmeric Powder
½ tsp Salt or as per taste
2 tbsp Coriander Leaves
1 tsp Vegetable Oil
½ cup Fried Onions (Birista)
Dry Roasting of Spices :
5 nos. Dried Kashmiri Red Chillies
1 tbsp Coriander Seeds
1 tsp Fennel Seeds (saunf)
1 Cinnamon Stick
2 Green Cardamoms
3 to 4 Cloves
½ tsp Cumin Seeds (Jeera)
½ tsp Peppercorns
Other Ingredients :
1 medium size Onion (sliced)
4 tbsp Vegetable Oil (I have taken only 4 tbsp oil from the kadai in which onions were fried to golden brown)
1 tsp Kashmiri Red Chilli Powder
1 tbsp Ginger Garlic Paste
Water wherever required
4 Green Chillies (whole)
1 tsp Garam Masala Powder
Salt (as per taste)
½ cup Coriander Leaves
*Please note I have used only 4 tbsp Vegetable Oil for this recipe*
Note : tsp is teaspoon
tbsp is tablespoon
1 cup is 200 ml
