Baked Pesto Chicken
2- 3 lbs Boneless Chicken Breasts – trimmed & cut legnthwise
1/2 C Pesto – homemade or store bought
3/4 C Mozzarella Cheese – shredded
Salt & Pepper to taste
Trim chicken & cut legnthwise.
Place 1/4 C pesto on bottom of a 13 x 9 baking dish. Arrange chicken in baking dish. Cover
with remianing 1/4 C pesto.
Cover with foil and bake @ 350 for 30 minutes.
Remove foil and sprinkle the mozzarella cheese on top. Place back in oven for 5 minutes or until
cheese starts to melt and is bubbly. Place under broiler for a few minutes to brown cheese.
