Traditional Indian food is renowned worldwide for its wonderful use of herbs and spices, and its diverse range of deep-fried snacks, pastries, curries, gravies, sauces, rice dishes, tandoor-cooked meats, vegetable dishes, chutneys, breads and sweets.
The staple Indian diet consists of roti, rice, dal, chutney, pickle, beans and legumes along with meat or chicken or fish. These can vary from region to region with addition of several other components, but listing them here will be an impossible task.
Two types of food are served in the dhabas – non-vegetarian cuisine (which is the most popular) and vegetarian fare termed vaishno dhabas (where food is cooked in pure ghee or clarified white butter). Dal makhni is a popular dish in the vegetarian dhaba.
