Beef Biryani :
Ingredients:
Beef (mix boti) ½ kg
Oil 1/2 cup
Fried onions (sliced) 2 large
Ginger garlic paste 2 tbsp
Tomatoes 2 large
Red chili powder 1 tbsp
Turmeric powder ½ tsp
Coriander powder 1 tbsp
Cayenne pepper powder 1 tbsp
Salt to taste
Black pepper (whole) ½ tsp
Star anise 1
Black cardamom 1
Green cardamom 4-5
Cloves 4-5
Cinnamons 2
Bay leaf 1
Yogurt ½ cup
Lemon juice 3 tbsp
Fresh coriander ½ bunch
Rice ½ kg soaked 30 minutes and boiled with salt & whole spices
Lemon (sliced) 1
Tomato (sliced) 1 medium
Fresh coriander (chopped) 1-2 tbsp
Screw pine 2 ½ tbsp
Yellow color ¼ tsp
Method:
In a heated pan add oil beef and mix well until meat changes color. Add ginger garlic paste and mix well for 2 minutes. Cover and cook on low flame for 5 minutes. Add tomatoes fried onions and mix well. Add red chili powder, turmeric powder, coriander powder, cayenne pepper powder, salt, black pepper, star anise, black cardamom, green cardamom, cloves, cinnamon sticks and bay leaf. Mix well and cook for 2-3 minutes. Now add water, mix and bring it to boil, cover and cook on low flame until meat is tender (approx. 1 hour). Add yogurt and mix well. Then add lemon juice and fresh coriander,mix well and cook until oil separates & set aside.
For Assembling:
In separate pot, add boiled rice ,beef gravy masala ,lemon slices, tomato slices, fresh coriander and add remaining boiled rice. In screw pine, add yellow food color and mix well, drizzle over biryani. Now cover and steam cook on low flame for 8-10 minutes. Garnish with fried onion and serve hot.
Cheesy Pull Apart Bread:
Ingredients:
Loaf bread 1
Cheddar cheese (shredded) 1cup
Butter (melted) 4 tsp
Garlic paste 1 tsp
Dried parsley 1 tsp
Dried oregano 1tsp
Method:
Preheat the oven to 400˚F (200˚C).Cut the bread crosswise, making sure not to cut all the way down to the base of the bread. Cut in the opposite direction to form diamond shapes, again keeping the base of the loaf intact. Place pieces of cheddar cheese between cuts. Now mix the melted butter, garlic paste, parsley, and oregano and brush over the top of the bread. Bake for 15-20 minutes, until the bread is toasted and the cheese is melted. Enjoy!
Kachumber:
Ingredients:
onion, chopped 1 medium sized
Tomatoes (chopped) 2 medium sized
Cucumber (chopped) 1
Coriander leaves (chopped) ¼ cup
Lemon juice 1 teaspoon
Lemon pieces a few for garnish
Roasted cumin powder ½ teaspoon
Green chili 1
Salt, black pepper as required
Method:
After cutting the vegetables take all of them in a bowl. Add the rest of the ingredients. Toss the salad well so that the ingredients are mixed evenly. Check the seasoning and add more salt or lemon juice, if required. Serve the kachumber salad
