Kerala beef fry is a dish made of beef, slow-roasted in a mixture of spices, onions, curry leaves, and coconut slivers, fried in coconut oil. The dish is also popularly known in Kerala as “Beef Ullarthiyathu
Ingredients
For Cooking Beef:
Beef – 1 kg, cut into medium stripes
Salt – ¾ Teaspoon
For marination:
Chilli powder – 1 to 1 ½ Tablespoon, adjust the quantity according to your taste
Turmeric powder – ¼ Teaspoon
Garam masala – 1 Teaspoon
Rice flour – 1 Teaspoon
Lime juice – ½ Tablespoon
Curd – 1 Teaspoon
Crushed kasuri methi – 1 Teaspoon
Chopped coriander leaves – 1 Teaspoon
Salt to taste
For Deep Frying:
Green chillies – 6 Nos, cut diagonally
Curry leaves – 3-4 sprig
Lentil Fryums/Pappadam – 3-4 Nos, tear-off into small stripes
Coconut oil – for deep frying
Directions
Cook together the ingredients mentioned under ‘For Cooking Beef’ along with enough water till the beef is cooked well. Drain the water completely.
In a bowl, mix together the cooked beef along with the ingredients under ‘For marination’ and set aside for 10 minutes.
Heat coconut oil in a pan, deep fry the marinated beef on high flame for about 7-10 minutes or till the beef is dark brown in color.
One minute before removing the beef from oil, add the chopped green chillies and curry leaves and fry.
Then remove the fried items using a slotted spoon, and transfer it to a paper towel to remove excess oil.
Then fry the lentil-fryums/pappadam pieces until crispy, add this into the fried beef and toss well.
