Beef Varattiyathu malabar style
Fenugreek (uluva) plays an important role in the malabar beef recipes. The northern Keralites prefer beef roast rather than beef curry and beef fry. A typical Friday starts off in Malappuram Area with people flocking around the small beef shops. The beef starts boiling in the clay pots by around 10 am and the men taste this gravy along with dosa or steam cake before going for the friday prayer.
The ladies in the house then roast this beef by adding freshly ground pepper, fresh coconut oil, Curry leaves and uluva and a drooling flavor spreads all over the house.
Parotta ( porata) and beef is also a special combo for most of the special occasions in the Malabar households and even this combo is available as a breakfast dish in most of the restaurants in these part of Kerala.
