How to make kolkota / Bengali style chicken biriyani with very few ingredients…….
**** easy and simple ingredients****
WITHOUT using coriander and mint leaves.
METHOD:
1.Marinate the chicken and potato by adding red chilli powder,kasmiri mirch powder,ginger garlic paste,salt,turmeric powder,cardamom powder,cumin powder,rose water,curd.
2.Take a sauce pan and add whole garam masala, onions,ginger garlic paste sort it for 5 minutes, add the marinated chicken and potato,stir it close the lid and cook for 15 – 20 minutes.
PREPARATION OF RICE:
1.Wash and soak the basmati rice for 30 minutes.
2.In the boiling water add cardamom,small piece of a cinnamon stick, bay leaves,cumin seeds/jeera,aniseed/sauf, add the soaked rice. cook the rice. once it is 80% cooked.strain the rice immediately and transfer it to the sauce pan , layer it on the top of the chicken gravy masala.
3.Add ghee,saffron soaked in 2 tablespoon of milk, rose water on the rice. close the lid. leave it in the dum/stream for 10 min.
4. open the lid after 10 min and serve hot.
