During the summer, I (Rachel) likes to grill up extra chicken breast and have them ready in the fridge for days I want to mix up a cool dinner with ease. This Avocado Chicken Salad is one of those perfect for hot summer months- but honestly, it’s so delicious, it’s good any time of year!
Avocado Chicken Salad
Ingredients:
3-4 boneless chicken breast, cooked & diced
½ medium onion, diced
1 large avocado, diced (if they’re small, you may need 2-3)
½ lime, juiced
2 tablespoons fresh cilantro, diced
½ teaspoon sea salt
Directions:
Mix all ingredients. Serve on bread or lettuce leaves.
