Instructions:
Take the whole chicken, cut out the spine and open it like a book.
Place it on a board, breast and leg side up and press it down to flatten it and hold shape
To a bowl, add dry red chillies and hot water. Let it soak for 10 minutes
To a big bowl, add vinegar, salt, sugar, water and mix well till the salt and sugar dissolves.
Add the whole chicken to the vinegar solution and press it down so it’s submerged
Let the chicken soak in the brine for an hour
In a mixing bowl add all the ingredients for the butter mixture and mix thoroughly until homogeneous.
Heat a pan, add oil, add garlic, diced onion and bell pepper and saute till charred and smoky
Transfer it to a blender and add soaked chillies, tomato ketchup, paprika powder, salt, black pepper, lemon juice and blend it to a fine paste and a cube of butter.
To another blender, add mozzarella cheese, fresh cream, red chilli sauce, oregano seasoning and blend it to a fine paste, keep it aside.
Take the chicken out of the brine and pat it dry with a clean cloth or kitchen tissues.
Fill up a syringe with the cream cheese mixture and inject it into the fleshy parts on the chicken generously.
Gently apply the butter mixture inside the skin of the chicken without tearing the skin.
Rub the chicken on the marinade and transfer it to a greased tray and let it marinate for 30 minutes.
Pour the remaining marinade over it.
Preheat an oven at 200 degree celsius.
Bake the chicken at 200 degrees for 40 minutes.
Take out the chicken, cut and serve it hot.
