BHUNA CHICKEN
INGREDIENTS:
1 kg chicken with bone
1 tbsp garlic paste
1 tbsp ginger paste
1/2 tbsp turmeric
3 tbsp degi mirch powder
1 tbsp of yogurt
Juice of half a lemon
1 tbsp Coriander seed powder
2 tbsp of oil (groundnut oil/mustard oil)
Salt to taste
3-4 tbsp of oil
2 tbsp of ghee
2 Tej patta/Bay leaves
3 Laung/Cardamom
10 Kali Mirchi/peppercorn
3 onions that are finely chopped
1/2 cup of beaten yogurt

3-4 green chillies slit
Freshly chopped coriander leaves
METHOD:
FOR MARINATION
Take 1 kg chicken with bone
Add 1 tbsp garlic paste
Add 1 tbsp ginger paste
1/2 tbsp turmeric
3 tbsp degi mirch powder
1 tbsp of yogurt
Juice of half a lemon
1 tbsp Coriander seed powder
2 tbsp of oil (groundnut oil/mustard oil)
Salt to taste
Mix everything well
Let it rest for 15-20 minutes
Heat a kadhai
Add 3-4 tbsp of oil
Add 2 tbsp of ghee
Add 2 Tej patta/Bay leaves
3 Laung/Cardamom
10 Kali Mirchi/peppercorn
Add 3 onions that are finely chopped
Fry the onions until golden
Add the marinated chicken
On a high flame, sauté the chicken well for at least 4-5 minutes
Add 1/2 cup of beaten yogurt
Sauté it again for another 4-5 minutes

Stir and bhuno for another 3-4 minutes
Cover and cook on a medium-low flame until chicken cooks
Add 3-4 green chillies slit
Freshly chopped coriander leaves
Give it one final stir
Shut the flame
Serve
