1) Butter Chicken Ingredients
To marinate the chicken
• 500 g boneless & skinless chicken (you can also use bone-in chicken)
• 3 tbsp thick yogurt/hung curd
• 2 tbsp ginger garlic paste
• 2 tsp coriander powder
• 1 tsp garam masala powder (add as per taste)
• 1 tsp cumin powder
• 1 tsp Kashmiri red chili powder
• 1/2 tsp turmeric powder
• 1 tbsp lemon juice
• Salt to taste
• 2 tsp oil
• 1 tsp Kasuri methi/dried fenugreek leaves (roasted and crushed)
For butter chicken gravy
• 2 tsp oil + 50 g butter
• 1 small onion, sliced
• 7-8 garlic cloves
• 1 tsp grated ginger
• 1-inch cinnamon
• 3 green cardamom
• 4 cloves
• 10 peppercorns
• 1 tsp cumin powder
• 1 tsp garam masala powder
• 2 tsp coriander powder
• 2 tsp Kashmiri red chili powder
• 1/2 tsp turmeric powder
• 250 g tomato, sliced
• 10 cashews
• Salt to taste
• 1/2 cup water
• 50 g butter
• 1 tsp sugar (add as per taste)
• 1/4 cup cream
• 1 tsp Kasuri Methi (dried fenugreek leaves)
Coriander leaves to garnish
2) Chicken Tikka Masala Ingredients
To marinate the chicken
• 600 g boneless chicken
• 2 tsp ginger-garlic paste
• 1 tbsp lemon juice
• Salt to taste
• 1/2 tsp spicy red chili powder
• 1/4 tsp turmeric powder
• 1 tsp Kashmiri red chili powder
• 1/2 tsp cumin powder
• 1/2 tsp garam masala powder
• 2 tsp oil
• 1/4 cup hung curd
• 1 tsp roasted & crushed Kasuri Methi
To make Indian chicken tikka masala
• 2-3 tsp oil (divided)
• 2 tbsp butter (optional)
• 2 onions, chopped
• 1 tsp ginger-garlic paste
• 1 finely chopped green chili (optional)
• 1 tsp Kashmiri red chili powder
• 1/2 tsp turmeric powder
• 1/2 tsp cumin powder
• 2 tsp coriander powder
• 1 tsp garam masala
• 400 g fresh tomato puree (or tomato passata)
• 1/2 tsp sugar (optional)
• 1/2 cup heavy cream
• 1/2 tsp Kasuri methi (roasted and crushed)
• Coriander leaves
3) Chicken Pathia Ingredients
• 2 tbsp oil
• 1 onion, finely chopped
• 2 tsp ginger-garlic paste
• 500 g boneless chicken breasts, cut into 1-inch cubes
• 1 tsp paprika
• Salt to taste
• 1 tsp Kasuri methi (dried fenugreek leaves)
• 2 tbsp medium hot curry powder
• 400 ml tomato passata (or fresh tomato paste)
• 1/2 tsp tamarind paste
• 1 tbsp sugar
• 1 tsp lemon juice (add as per taste)
• 1 green chili (optional)
• 2-3 tbsp chopped coriander leaves
