Butter chicken is one of the most popular chicken recipes in India. Golden fried chicken pieces are cooked in a creamy tomato base. It is best served with roti, naan or pulao.

Ingredients

To marinate chicken
Chicken – 500 Gms
Ginger & Garlic – 1 Tbp
Curd – 2 Tsp
Juice Of 1/2 Lemon
Turmeric Powder – 1 tsp
Kashmiri Chili Powder – 1 Tsp
coriander powder – 2 tsp
Garam Masala – 1/2 Tsp
Salt – 1/2 Tsp

To make masala paste
Butter – 3 Tbsp
Oil – 2 Tbsp
Onion – 1 Nos Chopped
Ginger & Garlic – 2 Tsp
Tomato – 3 Nos Chopped
Kashmiri Red Chili powder – 1 tsp
Salt – 1 Tsp
Turmeric Powder – 1 Tsp
Coriander Powder – 2 Tsp
Garam Masala – 1/2 Tsp
Cashew Nuts – 10 Nos
Water – 1/4 Cup

To make butter chicken
Butter – 2 Tbsp
Water if required
Fresh Cream – 3 tbs
Kasuri Methi 1 tsp

Method:
1. Take the boneless chicken pieces in a bowl, add lemon juice, hung curd, ginger garlic paste, red chili powder,turmeric powder, coriander powder, garam masala, salt
2. Mix everything well, and marinate the chicken for about 30 minutes
3. Heat a pan and add some oil
4. Fry the chicken pieces till they are cooked and keep them aside
5. In a pan heat some oil and butter, add onions, ginger, garlic and saute them
6. Once they are golden brown, add tomatoes, cashews and saute them
7. Add turmeric powder, kashmiri red chilies powder, coriander powder, garam masala powder, salt cook them with little water
8. Once they are cooked, cool them and grind them to a fine puree
9. Heat the same pan add the puree onto the pan, add some butter and fresh cream.
10. Bring the gravy to a boil, add the fried chicken pieces and simmer the gravy for about 5 minutes
11. Finally, add kasuri methi and mix well
12. Serve it hot with naan, roti or pulao.
